A biofilm is a colony of bacteria that clings firmly to an inert surface using a complex material similar to polysaccharide. Once formed, a biofilm provides bacteria with a favorable environment for their survival while protecting them from liquid flows, changes in pH or temperature, and chemical cleaning and sanitizing agents.
The appearance of the latter is due to incomplete cleaning or sanitation, when it has settled down, it is extremely difficult to remove. Its removal often requires the use of advanced cleaners containing oxidizing agents. The best way to prevent biofilm formation is to quickly, regularly and thoroughly clean and sanitize all food production surfaces.
